We find our way to crafting brilliantly flavoursome dishes by simply asking the ingredients. As if breathing in the Mediterranean air, we allow ourselves to soften here at Il Passaggio, by choosing to leave things a little exposed… relaxed. We know how obsessions can get the better of us all, so amongst the team, we loosen up, allow the ingredients to do the talking and dictate the pace.
